Sangria (Spain)
- 2 l red wine from La Rioja
- 100g of powder sugar
- 10 cl of Cognac
- 10 cl of Cointreau
- 8 cl of Orange juice
- 4 cl of Lemonjuice
- 1 orange
- 1/2 lemon
- 2 peaches
- 1 apple
- 1/2 l of soda
Macerate for a few hours the wine, the sugar, the Cognac, the Cointreau, the Apple Juice and the cut fruits.
Put on the fridge
Put the Soda on the mix at the last time, just before tasting...
Onions Red Pie (Mediterranean)
- 800 g of red onions
- 25 cl of red wine
- 150 g of smoked bacon strips
- 4 eggs
- 1 table spoon of cream
- 10 cl of Olive Oil
- Salt & Pepper
- Slice thinly the onions, brown them in a pan with 5 cl of Olive Oil.
- Blend red wine with the onions, cover and cook mildly untill evaporation, salt and pepper.
- Brown the bacon strips.
- Whisk eggs and cream, then blend them with the bacon strips.
- Spread the puff paste on a pie pould, add the bacon strips/onions mix.
- Cook 30 minutes at 200°c
Red Wine Chocolate Cake (Germany)
- 250 ml of red wine
- 250 g of butter
- 250 g of flour
- 200 g of chocolate
- 125 g of sugar
- 6 eggs
- vanilia sugar
- 1table spoon of cocoa powder
- 1 table spoon of cinnamon
- Melt the butter
Whisk eggs with sugar.
Add vanilia sugar, cinnamon and cocoa powder.
Add the red wine and the flour.
Add the melted chocolate.
Cook 35 minutes at 180°C
Bonus
Mulled Wine
- 75 cl Red Wine (Côte du Rhône, Gamay)
- 125 g of sugar
- 1 Orange
- Spicies: 2 cinnamon sticks, 3 cloves, 10 black pepper beans, 1 star anise
Pour the wine in a saucepan
Heat it up without boiling with the star anise
Add the sugar, the cinnamon, the cloves, pepper, and the orange zest
Let it boil until simmering during 20 minutes
Filter with a colander
Serve it warm
